Lisbon: Restaurante 100 Maneiras
I visited Restaurante 100 Maneiras in January 2020. The restaurant is the vision of Ljubomir Stanisic, a Bosnian who immigrated to Portugal in 1997, after living through the Bosnian War. The 17-course tasting menu at this fine dining restaurant tells his life story in a creative and thought-provoking way.
Atmosphere
The restaurant is gorgeous. There are two options when making your reservation: The Back & The Glass Room or the Dining Table. We opted for a reservation in the Glass Room, at the front of the restaurant. Spacious, comfortable, and with a low level of noise, the atmosphere was perfect for savoring an hours long meal. The Glass & Back Rooms are perfect for an intimate dinner.
The staff at the restaurant are professional and knowledgable. Every question about a drink or a food course had an answer. It was a very welcoming and comfortable environment.
Recommended Dishes
There are multiple tasting menus to choose from, but I recommend you opt for The Story, which is the full 17-course menu. And, while you’re at it, I also recommend you “go big or go home” and add on the Bold Pairing. This will pair 10 drinks with your meal. I promise, it’s worth it.
I’m not going to ruin any surprises for you, but I will share some of my favorite courses.
The very first course, Welcome to Bosnia: “flower” bread, ajvar, kajmak, pasteta, stelja, and sea “butter.”
Look, I’m not going to pretend like I know what every single one of those things are. BUT. This might have been some of the best bread in my entire life. And all the bowls were filled with unbelievable flavors to complement the bread.
Finally, my favorite part of this dish: the bread is a family recipe and the chef’s own mother makes it for the restaurant every day. I love a family business.
Sarajevo Cigar: potato foam, smoked tea bread, and čvarci “tobacco.”
This presentation was really fun and the flavor was out of this world. We had four people in our group, so we each got a “cigar.”
The Last Supper: cow head, horseradish, marrow, and somun bread.
This was a “build your own” style dish, meant to be built in a taco-style. The meat is slow cooked, making it incredibly tender. The accompanying flavors meld perfectly. And you’re given a hot sauce labeled “poison” which, luckily for us, is really just more incredible flavor.
I love Mexican tortillas…but I have to admit. This somun bread, or Bosnian flatbread, give tortillas a SERIOUS run for their money when it comes to tacos!
Price
This is not a low budget dinner. Expect to spend over 200€ per person for The Story and Bold Pairing.

You definitely want to make a reservation here. This is easy to do online through the restaurant’s website. Expect to spend at least 3-4 hours dining here.
